Sabudana (Tapioca/Sago) Khichadi

Ingredients:

 

 

1)      Overnight, or at least one hour before, soak for five minutes, partially drain, and let stand in flat container.

2)      Mix with ground peanuts.

3)      Melt butter in a wok like pan at medium heat.

4)      Add chopped green pepper.

5)      Add cumin seeds, rubbed between palms.

6)      Add grated ginger.

7)      Stir for 1-2 minutes.

8)      Add tapioca and peanuts.

9)      Mix fully.

10)  Add more butter if it looks dry.

11)  Cook and stir for 5 minutes.

12)  Lower heat and cover.

13)  Let cook for 10 minutes, occasionally stirring. If there is no steam, turn up heat.

14)  Turn off heat, let stand for 5 minutes, stirring occasionally.

15)  If too dry while cooking, sprinkle milk over.

16)  Garnish with cilantro and lime juice or lemons. and serve optionally with yogurt.
